I have a couple of cooked chicken drumsticks left over from last night. Thought I would use them up in a pasta dish. Friend gave me a pasta dish recipe using tinned tomatoes with the pasta.
Just wondering what other people do with leftover chicken to create a different meal using pasta. Would love you to share your recipes

I find leftover chicken quite difficult because when reheated the flavour changes and the texture almost always becomes tough. Best in a sandwich, or in a chicken pie with lots of bechamel. Sometimes when it hasn't been aggressively flavoured I put it into a homely fried noodle dish, but it's not great to be honest.

This is an American style chicken salad mixture to put in sandwiches or serve with toast or crackers. You can also serve it on on a bed of lettuce with a scatter of capers and some cornichons on the side for a light lunch or dinner.
Remove the chicken skin and bones then blitz briefly in a food processor until it's chopped, then add the remaining ingredients and pulse to mix, chill and its ready to use. (Fresh tarragon is quite hard to find here in winter especially and I haven't used dried but fresh parsley would probably be okay.)
500g cooked rotisserie chicken PLUS all the fat and drippings from its container, (add a drizzle of good olive or or a bit of mayo if its looking a bit dry if you didn't have the juices) 2 tablespoons Dijon mustard,
2 small ribs celery, 1 chopped shallot or a couple tablespoons of red onion chopped, 1 clove crushed garlic, 1 - 2 tablespoon of fresh tarragon (or chervil), juice of 1/2 lemon, season with salt and pepper.
