This is a favourite at our house:

Courgette Quiche

1 cup courgettes - chopped or sliced
1 cup cheese
5 eggs -beaten with a little milk
Add - 3 rashers of chopped bacon or ham
1 cup flour
1 tsp baking powder
2 Tbspns melted butter - add last

Cook in a moderate oven for 30 minutes until set. Onions and tomatoes can also be added.
