I've always used the Edmond's Cook Book recipe and it is fine. Are you sure it thickened enough initially? If it's your first time, it could take a couple of goes before you get it perfect. If you look up on Google there may be some recipes you can use it in as it is. Good Luck :-)))

This month's Taste magazine has a recipe plus very precise details on how to make the perfect lemon curd. It also has variations on lemon curd, ie lime curd, orange curd passionfruit curd and would you believe raspberry curd. I ventured out and bought a copy after reading very positive comments on here. And for $5 it is value for money.

No it doesn't!! Nevermind. There is a whole list of these things, but they don't all work on this forum. Type emoticons into google and you'll find lots of them.
Alternatively, you can go to www.bestsmileys.com where there are pages and pages of the little critters. You can keep the index page open beside the foodlovers page, then when you want a smiley, just highlight the the TEXT beside the smiley you want, right click and copy. Then flick back to Foodlovers, and paste it in.

I made some lemon honey the other day. About a week later I went to use some and there were a few specks of mold on the top of some of them. I had sterilised the jars well so don't think this is why.
Have now poured wax on the remaining jars to hopefully prevent this.
Could someone tell me how long you can store lemon honey, and should it be kept in the fridge before and / or after opening? Thanks K.
