Using lemon grass?

I was given some of this and have it growing nicely now.... but need some advice on how to actually use it, as in which parts, where do you cut it from the plant and then how do you prepare it, and what could I use it in?
Any hints gratefully received, so I can make the best use of it.

When you use lemongrass it is abit like a leek. Remove the tough outer layer or 2 and it is the middle white part you use. Chop it finely. You can also throw a whole piece in to flavour broths or soups, just remember to remove it. As Dawn mentioned, they are also fantastic to use instead of skewers for barbequing meats as they do impart a lovely flavour and look good too. Great to mince and flavour prawn meat and mould around the lemongrass stalk.

I've grown lemongrass too and (unless I've been killing them!!) they seem to be an annual plant. I believe you have to harvest the lot, as it won't grow again next year unfortunately. You can freeze them whole to preserve them. Don't let them get too big though - a mistake I made when I first grew them. The only way I can explain it is to ask you to think of a clove of garlic or an onion that is just starting to sprout roots!! The lemongrass kind of does that if it's too old. A very narrow inner part of the grass will turn dark and soft and yukky!! I couldn't tell you when that started to happen though sorry. I didn't harvest any this year, I just left it as an ornamental grass in with the rest of my herbs. Good luck with it - it's lovely finely chopped and mixed with a marinade for chicken.

My plant was a gift from a friend, so I am not sure where she got it from. Prior to that I ahd another lot, also given to me....but I managed to lose that plant... this time I am determined to suceed with it and actually get to try using it.
So I have appreciated all the hints folk have shared with me.
