I usually just do the mince with grated cheese. Except the kids decided they taste nicer without the mince.
Sometimes I'll do a smoked chicken breast with spring onions, and cheese. Thats nice with a bit of tomato relish spread on the chips first.

Well I am probably very boring when it comes to Nachos but my kids LOVE thme and they are 2 and 4.
I brown my mince
then add a can of pasta sauce or you can add what ever sauce you like.
I dont put onions in my nacho mix..only for the kids sake.
I then put the mix on top of my chips, add grated cheese and then add cheese sauce...then put it under the grill until the cheese is melted.
Then i add sour cream....
Very yum, very fattening,but hey, it is the kids fav so i make once a fortnight
Sounds very bland but if yu buy the big bag of Bluebird salsa flavoured chips, you get some flavour out of those and they are not spicy hot either. Plus I find the cheese sauce is flavour too, we use a packlet cheese sauce and we use the tasty one...
I know my friend in Canada doesnt use mince at all, they have olives,salsa,cheese,beans etc....
I have found with the stand up tacos, once you bite into them, the whole thing breaks.

As a vegetarian I always use beans for nachos or tacos. My daughters' friends always used to love them too - it's an Alison Holst recipe and very tasty and ecomomical......
Chilli Bean Dip
1 large onion
2 cloves garlic
1 Tbsp oil
1 capsicum
2 tsp ground cumin
1 tsp oreganum
¼ - ½ tsp chilli powder
1 can baked beans
1 Tbsp tomato paste
Chop and cook onion in oil. Add capsicum, herbs and spices and cook 1-2 minutes. Strain excess sauce from baked beans and reserve liquid. Add beans and tomato paste and heat through. Mash slightly and add reserved sauce to desired consistency.
If you have made it too spicy, or want to make chilli stretch further, can add a tin of creamed corn.
Serve as over corn chips or potato wedges with grated cheese on top, in tacos or burritos, or with cheese in a toasted sandwich

Re my message above about Chilli Bean Dip - I was just talking to my sister (who has also made it for years, and her kids love it too) and sometimes she adds mince to the recipe as well. That would extend the cooking time of course, but would work for those who have blokey husbands who won't eat a meatless meal
