Try the url below there is a Grilled Garlic Mushroom with Hummus recipe which looks interesting - I don't like mushrooms so I am not trying. Its a good site which usually catches any recipes on the ABC stations throughout Australia and mostly changes daily, except this time of the year. Gaynor

Hi,
this is a recipe I used to make stuffed mushrooms a few weeks ago, it is from a stunning recipe book I have called 'The Food of Italy'
Stuffed Mushrooms (Serves 4)
8 large flat mushroms
1 1/2 Tbsp lemon juice
12 button mushrooms
20g butter
1 shallot, finely chopped
1 garlic clove, crushed
2 Tbsp white wine
100g parmesan, grated (plus 1 Tbsp to serve)
50g fresh breadcrumbs
1 egg, lightly beaten
3 Tbsp double cream
1 Tbsp chopped tarragon
1 Tbsp chopped parsley
Preheat the oven to 150 (celsius). Wipe the large mushrooms with a damp cloth, remove and discard the stalks and rub the caps with a little lemon juice to keep them white. Wipe the button mushrooms and chop them finely, then mix with the remaining lemon juice.
Heat the butter in a small frying pan, add the shallot and garlic and cook, stirring, for 4 minutes. Remove from the heat and stir in the Parmesan, breadcrumbs, egg, cream and tarragon. Season.
Place the mushroom caps on a lightly oiled baking tray and stuff with the filling. Bake for 12 minutes. Sprinkle with the parmesan and parsley and serve either warm or cold.
These were really delicious, and even my 13-year-old brother ate them, which is nothing short of a miracle for him!

Try whisking together a souffle, and cook it in mushrooms! (:
I'm in favor of button mushrooms with the stem twisted out; with either a piece of cheese (I'm partial to blue cheeses for this), or garlic butter in the hole where the stem was; cooked on the bbq (or I guess the grill would work too).
With cheese, adding in usual cheese accomaniments is also good - blue cheese with a little wedge of plum, or cheddar with walnut.

Last night on the hooded bbq, as an extra, I did the large portobello mushrooms and for the stuffing I mixed fresh breadcrumbs with a Horopito Aioli (sp??), and then topped with grated cheese - absolutely scrumptious. I only did 1 per person, but wish I did more, I could have just had those for my meal.

I marinade my mushrooms first, by cutting out the stems then lightly scoring the grilled side in crosses, then add a drizzle of o/oil and balsamic vinegar, I add salt and pepper, then top this with blue cheese and walnuts, you can add alittle garlic too if wanted. then drizzle a little white wine over them, leave them to sit for about 1/2 hour then either pop them into the oven or bbq and cook until mushroom has softened and the cheese melted. Yum! You can use feta instead of the blue cheese. Puhoi`s garlic and cumin feta is very good.
