I have arranged to take a dear friend out to lunch to celebrate her "O" birthday, but I think I will surprise her with a gourmet picnic!
I plan to make a lemon yoghurt cake (no icing needed and for ease of transport etc) and thought it might be nice to dress it up a bit on top with some rind or citrus slices etc. Can someone tell me how to poach slices of lemon that will dry off to be laid on the top? Or are there any other ideas to make it a bit more special.

Hi Alison,
You could make a syrup to pour over the cake and then use the rind pieces you have flavoured the syrup with to decorate the top as they would have been candied in the syrup. To make a nice syrup combine the rind of 3 lemons, the juice of those lemons, 1/2 cup of water, 1/2 c of honey and 4 bruised cardamom pods (optional) in a small saucepan. Bring to the boil gently and simmer uncovered for 5-7 minutes until syrupy. Remove pods and discard, remove rind and save. Use the hot syrup to pour over cake and leave the rind pieces to cool. Once cool, they would have a candied like texture and can be used to decorate around the top of the cake.

On one occasion when I made an apricot almond cake as a Birthday cake, I made it in a fancy ring tin, then the staff at the restaurant used canned whipped cream and fresh fruit to decorate it...... would something like that applied at the very last minute work??? A few berries/melon slices etc that you could take all sliced and in a chilly bin/bag, along with the can of cream to just squirt here and there.

Sugar frosted berries, or edible flowers, herb leaves would look lovely (brushed lightly with egg white, dipped in caster sugar and left to dry) Not sure how they would be in transport though - all the sugar might fall off, completely ruining the effect!? I'm sure your friend will be thrilled with a surprise picnic. Enjoy your lunch.

Ditto re the Orange and Poppy seed cake. Yummeeeee. I cut it into 1/4's, as I do with most cakes I make unless they are for someone or a special occasion, and pop them in the freezer otherwise it would all be gone in a day and this way there is always something in the freezer when anyone comes over and when we want to have some sweet.

I made the cake and poached some lemon and lime slices in the sugar mixture with Limoncello as Christine & Shirley M suggested with their links above. Then I drained them and laid them on the top of the cake. Looked great with lime, orange and purple ribbons around the side.
Have just come back from our picnic, and wouldn' you know it, the wind was rather nippy. I have a friend who lives in the Government Gardens here in Rotorua and she set up a table under the trees near her house. So after the first course we went inside and had coffee, cake and choccys.
I must remember next time I have a friend turning "O" not to plan a picnic! This is the second time the weather has let me down. Never mind, we had a good time and it makes great memories.
