Some people might not consider this to be relaxing reading, but... this year I have discovered Michael King, and have enjoyed some of his writing. A good starting point is his book, Tread Softly for you tread on my life. It is a collection of essays he has written about quite a variety of things, and is a good introduction to his writing.
Touch, and Morgan's Run, by Colleen McCullough.
Any of JOanne Harris', Chocolat, Five Quarters of the Orange, etc.
Anita Schreve... quite light reading.

The Northern Lights Trilogy by Phillip Pullman is wonderful. For something light and delightfully funny try "Parrot Parfait" by New Zealander Sue Emms. Others I have ready lately and enjoyed are: Time Travellers Wife, Middlesex, I Don't Know How She Does It, Da Vinci Code, Eragon and one of my all time favourites "Pillars of the Earth".
