One chicken and four edging blocks arranged along the top of the spatchcocked chicken - normal sized looking bricks with holes in them and each weighing 2.2kilos. I did not put a lid on the electric frying pan although I could have easily put the lid down on the bbq had I used that. I don't believe it. The blasted thing is cooked. Not only cooked but tender. The legs I can put my knife through as if they'd been cooking for hours and the wings are falling apart. I adhered to times religiously - ie: 8 + 8 + 4....God will not believe that and think someone else is Kone. I prefer fish pie (must have some smoked fish in as well as fresh) with pastry rather than mashed potatoes - although there are recipes that incorporate both. To my mind, potato deadens the flavour of the fish, while a good flaky puff pastry brightens it. My husband would agree with you wizz that there is no such thing as a good fish pie. Suffering catfish. I don't know where you all get the energy to cook up these wonderful sounding meals. All I can manage tonight is Pecorino, lemon, panko crumbed chicken schnitzel, (that I had the foresight to make this morning before I took charge of the surf) with potato, pea and mint salad and a fresh tomato salad. I even cheated with the potato salad and squirted the Japanese Mayo into it.by Kone - Foodlovers Food Talk

I"ve just fallen in love with courgette salad which I've avoided becos Himself doesn't like courgettes. This salad is nothing fancy, just grated courgettes, zest of lemon, lemon juice, s&p and fresh mint. He ate it, and enjoyed it. I made Jo's fluffy omelette for lunch as I had an egg white in the fridge. Four whole eggs later and I too had a fluffy cloud. As it was lunch for two I didn't want anything too substantial and filled it instead with diced tomatoes, kalamata olives, spring onion, fresh basil, lemon zest and cooked it slowly in a rectangular frying pan. I eggerly await J1's video. Just for the record, and I feel it must be recorded, I only use plain tap water to boil my eggs that are encased within a shell and do not prick any part whatsoever, which may explain why I sometimes have egg all over the ceiling. Naaa J1, your suggestion is too simple, who on earth is going to want to do that?!! Even if it works, which it does ---as I know. I made Dean's courgette fritters last night and they were an unqualified success. I flavoured them with dried mint and chopped fresh mint and the zest of a lemon and deep fried dollops of them. They were crisp and light, full of grated courgette and best of all, my picky husband enjoyed them. This is a memory I wish would stay buried in the past but Dean's post has brought the entire nightmare raging back. When we lived in Egypt we were invited to Easter out in the desert where some Palestinian friends lived.
