Re: Wild Duck Pate - 12 years ago
Foolish behaviour alright - paid the ultimate price too - I'll never forget microwaving a duck in Timaru many moons ago - it was like a shoot out at the OK Corral - so much shot still in the duck - we ruined the microwave!by lynley - Foodlovers Food Talk
Re: Wild Duck Pate - 12 years ago
But, but it's all about the random wild flavour - and foraging Stephanie!!..nothing tastes quite so good as free food!!...I used to feel the same about trout when I grew up in Taupo....when the slabs were running downstream....ewby lynley - Foodlovers Food Talk
Re: Wild Duck Pate - 12 years ago

Re: Virgil - Feijoa Wine? - 13 years ago
p.s. just ordered some gear online! exciting stuff - but probably dangerous - does homemade wine have a general alcohol % or does it vary - how do you measure this?by lynley - Foodlovers Food Talk
Re: Virgil - Feijoa Wine? - 13 years ago
Virgil - If the recipe calls for 5kg feijoas - would you weigh it before or after you scoop out the flesh? (I feel I should know this!)by lynley - Foodlovers Food Talk

Re: Russian Fudge - 13 years ago

Virgil - Feijoa Wine? - 13 years ago
Virgil - I read somewhere recently that you said feijoa wine was delightful, I have a glut on my hands - I have made jelly and jam - frozen pulp for winter crumbles - and refuse to turn a lovely fruit into chutney - can you tell me how to make wine? pretty please?by lynley - Foodlovers Food Talk

Re: Books to read - or not - 13 years ago
I loved Caribou Island! - I stayed on bed and read it last saturday in one go - then I got sad it was over - loved it - dark and flawed.....I love the harsh beauty of the Alaskan landscape...reminds me of growing up in Taupo with all my own flawed characters. Am reading all of Peta Mathias books I found at a market in a bundle - enjoyable - she writes well, and of course doesn't suffer fools gby lynley - Foodlovers Non-Foodie Chat
Re: dahl makhani - 13 years ago
oops - thought it didn't sound right at the end - I missed the end of the recipe: "Finally add the cream and butter slowly and mix well, until melted, adjust salt and add water if too thick. Garnish with fresh coriander and serve with cumin rice and naan bread." that's what happens when you try to do 5 things at once!by lynley - Foodlovers Food Talk
Re: Breadfruit - 13 years ago
Tempeh or tofu? You could freeze first to get that firmer texture...by lynley - Foodlovers Food Talk
Re: Breadfruit - 13 years ago

Re: Breadfruit - 13 years ago
oooh - really? you can buy breadfruit in NZ??!! I love breadfruit, the Fijians where we lived used to put in in the lovo (umu hangi) - we used to peel and fry in chunks like big chips, roasting it like potatoes would work well too. Yummo!by lynley - Foodlovers Food Talk
Re: dahl makhani - 13 years ago
oh and as end note - I sometimes add a little cream at the end - just to be wicked.....(sorry have been watching a little Nigella of late!)by lynley - Foodlovers Food Talk

Re: turkey drumsticks - 13 years ago
I found some once at the butcher "from across the ditch" in Mt Roskill - they were DISGUSTING - even the dog wouldn't eat them. I tried slow cooking them - as I had heard they were a little tough to get tender and juicy - they had the strongest gamey flavour you could imagine (not in a nice way either!). I don't know whether it was Turkey drums per se, or just bad luck with the onby lynley - Foodlovers Food Talk
Re: Thermomix? - 13 years ago
I'm only going here because I need a new food processor - my magimix is onto it's third bowl & lid! I could never figure out why they didn't produce a stainless bowl- but I guess it's that throwaway ($$) mentality - anyway I am also thinking about a commercial venture - and - well it can do everything - (plus so much more)and looks like it will last the distance too - I have spoken to the Aucby lynley - Foodlovers Food Talk
Re: Get yourself a damn quesadilla Napoleon! - 13 years ago
yeah my insides were kind of steamed - and I also use baking paper not gladwrap - works a treat with the peeling off part. I will keep going - I think my cast iron pan was hot enough - but I think my mix was a little dense - might need more liquid. I ordered the masa harina from thanks for the quick response - hope all is a little more stable in your neck of the woods karl!by lynley - Foodlovers Food Talk
Thermomix? - 13 years ago
Anyone ever bought/used one of these - food processors that can cook - I love the idea of a metal bowl - and might fast processor - what else can they do? Can you actually buy them in NZ? Looks like a might fine piece of kit to me.by lynley - Foodlovers Food Talk
Get yourself a damn quesadilla Napoleon! - 13 years ago
Love that movie - Napoleon Dynamite! Anyhoo - I have recently bought a 22.64 kg sack of masa harina - and a tortilla press - but I must be doing something wrong - I cannot get the tortilla thin enough with the press - they end up doughy - maybe my mixture needs more water? I don't know I am on a total latino bender -I just end up rolling them out with a rolling pin - anyone else have any experieby lynley - Foodlovers Food Talk
