P.M Lorna, she has got a fantasitc Bran / wholemeal muffin recipe she P.M'd Me.
Its solid and bran-y. I add sultana, banana or stewed apple if I have any. Her recipe makes 2 doz. It halves easily too. I had been hunting for "just the right texture and flavour" Bran muffin a while back and she sent her recipe to me. I hope Lorna doesnt mind me doing this...she may get inundated.:-).

I would like the recipe too!!! I made some bran and blueberry muffins today out of Alison Holsts muffins and slices, and they were nice, but I am always looking for nice bran muffin recipes!!!!

I, too, would like the recipe - sorry Lorna I will pm you for it, but am interested to know what people use as bran. I used to buy Vi bran and could not find any last time so got oat bran instead. Have found this is quite different to "bran" but made up a recipe yesterday from 3 different recipes for muffins and they are quite nice. Used wholemeal flour, oat bran, cinnamon, ginger, yoghurt, sultanas and chopped rather than mashed banana, among other things!. they are lovely and moist.

Here's my recipe, with some variations I have tried from time to time. There's no 'source' noted with this recipe so I'm pretty sure it's safe to post; I'm very particular about noting things like that, so I've probably 'inherited' it from someone or copied it from a magazine, a long time ago. If it was from a book, I would have noted the title and author.
4 cups bran
1 cup brown sugar
2 cups wholemeal flour
2 pinches salt
2 cups milk
2 teaspoons baking soda
50 grams butter , melted and cooled or canola oil
1 cup golden syrup
2 cups sultanas
Preheat oven to 200°C
Place dry ingredients in a bowl.
Warm milk, butter & golden syrup and mix in baking soda.
Add the milk mixture to the dry ingredients.
Combine until just mixed.
Bake in greased muffin pans for 10-15 minutes.
VARIATIONS (try any or all)
2 tablespoons ginger, ground
2 teaspoons mixed spice, ground
1/2 teaspoon cardamom, ground
2 tablespoons Molasses in place, of same amount of golden syrup
Notes: TRY: exchanging some milk for flavoured yoghurt. Add a mashed banana, apple or dried fruits such as apricots. Recipe can be halved successfully.

that looks lovely, what would be the equivalent in oil if I was going to use it instead of butter?

I will add the recipe I made up this week -as I made the whole thing up as I went I noted it all down for a change! It worked fine

1/2 C brown sugar
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp baking soda

Mixed all together then added
1/4 C oil
1 dsp golden syrup
1 egg
1 C yoghurt
1 chopped banana
1/4 C orange juice.
Baked at 200 for 20 mins
1 C Wholemeal Flour
1 C oat bran
2 tsp Baking Powder
1/2 C brown sugar
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp baking soda
sultanas
Mixed all together then added
1/4 C oil
