Here's a reply I received to a similar request some time ago.

American stick of butter = 8 tbsp = 4 oz = 113g

Paula, a stick of butter is 1/4 lb. - 4 sticks to the pound.

By my reckoning 4 oz actually equals more like 125g.

125 grams huh. That's a lot of butter for a a fish sauce. Not good for my waist line. Ahh well. Gota be better than fish and chips I guess. That's cool Ill work with that.

I have always gone on the theory of 1 stick being 125 gm too... we dont have the honor of having our "sticks"individually wrapped for us....

Sticks do actually measure 113g. Depending on the recipe, rounding up to 125g may or may not matter.

1oz = 28.3g x 4 = 113.3g

As American recipes are usually in Imperial, by rounding a pound up to 500g, 1/2 lb to 250g and 1/4 lb to 125g, everything remains in proportion. So 125g for a stick of butter would be okay as all the other ingredients would also need conversion.

What I usually do is multiply the number of ounces by 3 and add a 0 for grams, so a 4oz stick would be 120g and everything else in a recipe would convert proportionately.

Does that make sense?

I have a brand new set of scales that weighs in both grams and ounces so I put 125gr of butter on the scale and pressed the conversion button and 4.4 ounces came up. But as Colleen says, make sure you convert the rest of the recipe by whatever conversion method you use so that the correct proportions are maintained.
