Undercooked Lamb

We had a BBQ last night, and due to a misunderstanding with Mr Griz about how to use the thermometer we now have a large quantity of undercooked (pretty much raw) lamb leg off the bone. I'd like to find a way to use it up, any suggestions?

I would mince it or chop it in a food processor and make Moussaka. Let me know if you want a recipe.

Slice it, saute it and use it in sandwiches. Or in a lamb salad or in rice wrapper fresh spring rolls or tacos. Thinly slice it and use it to top a pizza or in a stir fry.

Wondering why you wouldn.t just have roasted again for another meal half an hour or whatever needed.
, I cook my lamb to 63* but own choice there

No need to slice and saute etc
. Add a few kumaras in to roast as well - prob need to boil 5 mins first so they would be cooked in the shorter roasting time

Heather H that is exactly what I ended up doing and it was fine. (Although I didn't bother with kumara).
