French Plum Cake
6-8 plums halved, sprinkled with sugar and left for a few minutes.
Cream 200g butter, 1 c sugar.
Add 2 eggs, rind of 1 lemon or orange, 1/2 tsp vanilla and beat.
Stir in 2/3 c milk, 2 c high grade flour, 1 tsp baking powder.
Pour into lined springform or loose bottomed tin (at least 20cm diameter)
Arrange plums on top
Bake 180 deg for 60-65 minutes.
I like this even better the next day. And I've made it with apricots too.
