spinach and cheese muffin

Hi Shirley,
I think this would make a good base instead of parsley tomatoe etc you could add some spinach.
Savoury Muffins
Dry
6 C Self-Rising Flour
3 Tblsp Sugar
1 ½ C Grated Cheese
1 ½ tspn Salt
1 Large Onion
Handful Parsley
1 to 2 Tomatoes
1 to 2 Capsicums
Wet
4 C Milk
3 Eggs
Method
Beat eggs and add to milk mixing together well. Combine wet mix with dry mix. Sprinkle tops with grated cheese and pumpkin seeds.
Or Perhaps you could try

Ingredients
2-4 C Self-rising flour
Cream
Lemonade
Onion
Cheese
Capsicum
Tomatoe (optional)
Parsley
Method
Place flour and dates in a large bowl, add cream, yesterdays whipped is good, then add lemonade until mix is the right consistency. Finely chop the parsley, onion, capsicum and tomatoe. Add a good handful of cheese to the mix, then add cream and lemonade until mix is a good consistency.
Roll out or ball to the size you want, put cheese and poppy seeds or pumpkin seeds on top and bake at 150 degrees Celsius.
Once again substituting the other bits for spinach

Wow Lisa your recipe for muffins must make a pile - maybe a Cafe recipe?
For 12 muffins I normally use
2 cups flour
3 tsp baking powder
1/4 tsp salt
1 cup milk (approx)
60g butter melted
This is the basic recipe and to that I add either of the following
* 1 cup blueberries and 3/4 cup caster sugar
* 1 cup grated cheese, 1 tab chopped parsley, 3 rashers chopped bacon cooked with 1/2 small onion, finely chopped
* 1 cup frozen raspberries and chocolate chips
You could easily add spinach and cheese.
I would go for 1 cup grated tasty cheese - or half and half with feta and tasty.
Probably about 100 spinach, steamed and finely chopped with stems removed.
Mix dry ingredients together and then make a well and add combined liquid.
Bake 200 for 12-15 minutes.
