It's possible to remove the fat from a stew as well as a soup if you don't want the fat, but it takes longer and you need to do it before you add a thickener like flour. I use 2 methods. 1. Precook and then chill. The fat will solidify on the top and you can take it off before you heat it up again and thicken the stock. 2. Cook and strain off the hot liquid. I'm a 60s child and I was brought up believing my diet was balanced and healthy. Home cooking, sweet foods only at the end of a meal, homemade baking but not a lot of snacking, no fizzy drinks, mostly water, occasionally fruit cordials. I think low carb cooking is becoming more and more popular. I think there is room for a good one written for a New Zealand audience but without preaching. I don't buy cookbooks that focus on baking or sweet foods, but plenty of people do.by AliciaWarrenNZ - Foodlovers Food Talk

Which cream has the highest milk fat content? - 7 years ago
HI everyone I remember the cream from my youth. My grandparents had a house cow or three, and their own cream separator. You can set a cream separator to give you thick or thin cream. They made thick cream. It was so thick it wasn't pourable. You had to spoon it out of the tub. This means more of the milk liquids were removed and the fat content was higher than the cream you can buy today.by AliciaWarrenNZ - Foodlovers Food Talk
